Ingredients
Scale
1 cup all-purpose flour
1/2 cup cold unsalted butter, cubed
1/4 cup granulated sugar
1/4 teaspoon salt
2 large eggs
1 cup granulated sugar
1/4 cup all-purpose flour
1/4 cup fresh lemon juice
1 tablespoon lemon zest
1/2 cup fresh or frozen raspberries
1/4 cup powdered sugar for dusting
Instructions
Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on two sides for easy removal.
Prepare the crust: In a medium bowl, combine 1 cup flour, 1/4 cup sugar, and salt. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
Press the crumb mixture evenly into the bottom of the prepared pan. Bake the crust for 15 minutes until lightly golden.
While the crust bakes, prepare the filling: In a separate bowl, whisk together the eggs, 1 cup sugar, 1/4 cup flour, lemon juice, and lemon zest until smooth.
Pour the lemon mixture over the hot, pre-baked crust. Gently scatter the raspberries over the top of the filling.
Return the pan to the oven and bake for an additional 20 to 25 minutes, or until the filling is set and the edges are lightly browned. The center should not jiggle significantly when gently shaken.
Let the bars cool completely in the pan on a wire rack. Cooling fully helps the filling set properly.
Once cool, lift the bars out of the pan using the parchment overhang. Cut into squares. Dust with powdered sugar before serving.
Notes
To prevent a soggy crust, bake the crust until it is lightly set before adding the liquid filling.
Use fresh lemon juice for the best tart flavor. Bottled juice may alter the set of the filling.
If using frozen raspberries, do not thaw them before scattering them over the filling.
