A straightforward recipe for making super crispy chicken wings in the oven with a sticky, sweet, and savory honey garlic glaze.

Ingredients

Scale
  • 2 lbs chicken wings, separated into flats and drumettes
  • 1 tablespoon baking powder (aluminum-free)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup honey
  • 1/4 cup soy sauce
  • 4 cloves garlic, minced
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon cornstarch
  • 2 tablespoons water

Instructions

  1. Preheat your oven to 425 degrees Fahrenheit (220 degrees Celsius). Line a baking sheet with foil and place a wire rack on top of the foil.
  2. Pat the chicken wings completely dry using paper towels. This step is crucial for crispiness.
  3. In a large bowl, toss the dry wings with baking powder, salt, and pepper until evenly coated.
  4. Arrange the wings in a single layer on the wire rack. Do not let them touch.
  5. Bake for 25 minutes.
  6. While the wings bake, prepare the sauce. In a small saucepan, combine honey, soy sauce, minced garlic, and apple cider vinegar. Bring the mixture to a simmer over medium heat.
  7. In a separate small bowl, whisk together the cornstarch and water to create a slurry. Pour the slurry into the simmering sauce, whisking constantly until the sauce thickens, about 1 minute. Remove from heat.
  8. After the initial 25 minutes of baking, flip the wings. Return them to the oven and bake for another 15 to 20 minutes, or until the skin is deeply golden and very crisp.
  9. Remove the wings from the oven. Place them in a large clean bowl. Pour about half of the prepared honey garlic sauce over the wings and toss gently to coat them completely.
  10. Serve immediately with any remaining sauce on the side for dipping.

Notes

  • Using baking powder (not baking soda) helps dry out the skin surface, leading to a crispier result when baking.
  • For extra crispiness, you can place the wings in the refrigerator uncovered for at least one hour after coating them with the baking powder mixture before baking.
  • If you prefer a thicker glaze, use slightly less water when making the cornstarch slurry.
