Make these simple, no-bake peanut butter protein bars using only five ingredients. They are quick to mix, perfect for meal prep, and taste better than store-bought options.

Ingredients

Scale
  • 1 cup rolled oats
  • 1/2 cup natural peanut butter
  • 1/2 cup vanilla protein powder
  • 1/4 cup honey or maple syrup
  • 1/4 cup dark chocolate chips (for drizzle)

Instructions

  1. Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
  2. In a medium bowl, combine the rolled oats, peanut butter, protein powder, and honey or maple syrup.
  3. Mix all ingredients thoroughly until a thick, uniform dough forms. You may need to use your hands to fully incorporate everything.
  4. Press the mixture evenly into the prepared pan. Press down firmly to make sure the bars hold together well.
  5. Place the pan in the refrigerator to chill for at least 1 hour, or until firm.
  6. Once firm, lift the block out using the parchment paper overhang. Cut into 10 even bars.
  7. Melt the dark chocolate chips in a microwave-safe bowl in 30-second intervals, stirring until smooth.
  8. Drizzle the melted chocolate over the top of the bars.
  9. Return the bars to the refrigerator for 15 minutes to set the chocolate before serving.

Notes

  • For a vegan option, use maple syrup instead of honey.
  • If the mixture seems too dry, add one teaspoon of water or milk at a time until it comes together.
  • Store these homemade protein bars in an airtight container in the refrigerator for up to one week.
  • You can substitute peanut butter with almond butter for a different flavor profile.
