Make a rich, pourable coffee creamer that captures the flavor of vanilla custard and caramelized sugar.

Ingredients

Scale
  • 1 cup heavy cream
  • 1 cup whole milk
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 1/8 teaspoon salt
  • 1 tablespoon light brown sugar (for topping simulation)

Instructions

  1. Combine the heavy cream, whole milk, granulated sugar, vanilla extract, almond extract, and salt in a small saucepan.
  2. Heat the mixture over medium heat, stirring constantly until the sugar dissolves completely and the mixture is steaming, but do not let it boil.
  3. Remove the saucepan from the heat. Allow the mixture to cool slightly.
  4. Whisk in the light brown sugar until it is mostly dissolved. This adds a slight molasses note mimicking the burnt sugar crust.
  5. Pour the cooled creamer into an airtight container.
  6. Refrigerate for at least 2 hours to allow the flavors to meld.
  7. Use 2 to 3 tablespoons per cup of hot coffee. Stir well before serving.

Notes

  • For a thicker creamer, reduce the amount of whole milk used.
  • If you prefer a stronger vanilla flavor, use vanilla bean paste instead of extract.
  • Store the finished creamer in the refrigerator for up to one week.
