Ingredients
Scale
1 pound carrots, peeled and cut into 1-inch pieces
2 tablespoons butter
1/4 cup brown sugar, packed
2 tablespoons whiskey (bourbon works well)
1 tablespoon apple cider vinegar
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon fresh parsley, chopped (for garnish)
Instructions
Place the cut carrots in a medium saucepan and cover them with water. Add a pinch of salt. Bring the water to a boil and cook the carrots until they are tender-crisp, about 8 to 10 minutes. Drain the carrots well.
While the carrots cook, prepare the glaze. In a separate small skillet, melt the butter over medium heat.
Add the brown sugar to the melted butter and stir until the sugar dissolves and begins to bubble, about 2 minutes.
Carefully pour in the whiskey. Let the mixture simmer for 1 minute, allowing some of the alcohol to cook off. Stir constantly.
Whisk in the apple cider vinegar, salt, and pepper. Continue to cook until the sauce thickens slightly, about 1 minute more.
Add the drained, cooked carrots to the skillet with the glaze. Toss gently to coat all the carrots evenly. Cook for 1 to 2 minutes until the carrots are fully heated through and the glaze adheres.
Remove from heat. Transfer the carrots to a serving dish and sprinkle with fresh parsley before serving.
Notes
If you prefer a less intense alcohol flavor, simmer the glaze mixture for an extra minute before adding the carrots.
You can substitute maple syrup for brown sugar for a slightly different sweetness profile.
For a deeper flavor, use a smoky Scotch instead of bourbon.
