- 4 cups cubed seedless watermelon
- 1/4 cup fresh mint leaves, packed
- 2 tablespoons fresh lime juice
- 1 tablespoon granulated sugar (optional)
- 1 cup cold club soda or sparkling water
- Ice cubes
- Place the watermelon cubes into a blender. Blend until completely smooth.
- Pour the watermelon puree through a fine-mesh sieve into a bowl to remove excess pulp. Discard the pulp.
- In a separate glass, gently muddle the mint leaves with the lime juice and sugar (if using). Muddle just enough to release the mint aroma.
- Divide the muddled mint mixture evenly among four serving glasses.
- Fill the glasses with ice cubes.
- Pour the strained watermelon juice over the ice, filling each glass about three-quarters full.
- Top each glass with cold club soda or sparkling water.
- Stir gently to combine the layers. Serve immediately.
Notes
- For a sweeter drink, increase the sugar to 2 tablespoons.
- If you prefer a stronger mint flavor, increase the mint leaves to 1/3 cup.
- You can prepare the watermelon puree up to one day ahead and store it in the refrigerator.
