Make creative vegetarian appetizers using seasoned carrots wrapped in flaky puff pastry, resembling classic Pigs in a Blanket.

Ingredients

Scale
  • 1 pound large carrots, peeled
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon liquid smoke (optional)
  • 1 package (14.1 ounces) refrigerated puff pastry, thawed
  • 1 tablespoon plant-based milk or egg wash (for brushing)
  • Sesame seeds (optional, for topping)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a baking sheet with parchment paper.
  2. Prepare the carrots: Cut the carrots into sticks roughly the size and shape of small sausages, about 3 to 4 inches long and 1/2 inch thick.
  3. Steam or boil the carrot sticks until they are tender-crisp, about 5 to 7 minutes. Drain them well and pat them completely dry with paper towels.
  4. In a bowl, toss the dried carrot sticks with olive oil, smoked paprika, garlic powder, onion powder, salt, pepper, and liquid smoke, if using. Mix until the carrots are evenly coated.
  5. Unroll the thawed puff pastry onto a lightly floured surface. Cut the pastry sheet into strips about 1/2 inch wide.
  6. Take one seasoned carrot stick and wrap a pastry strip tightly around it, overlapping slightly as you go, to fully encase the carrot. Pinch the ends to seal.
  7. Place the wrapped carrots seam-side down on the prepared baking sheet. Brush the tops lightly with plant-based milk or egg wash and sprinkle with sesame seeds, if desired.
  8. Bake for 15 to 20 minutes, or until the pastry is puffed and golden brown.
  9. Remove from the oven and let cool slightly before serving warm.

Notes

  • For a vegan version, use plant-based milk for brushing the pastry.
  • If you prefer air frying, cook at 375 degrees Fahrenheit for 10 to 12 minutes, checking frequently until golden.
  • Serve with mustard or a sweet chili dipping sauce.
