Make a creamy, healthy vegan chocolate chia pudding using basic plant-based ingredients. This recipe is perfect for a quick breakfast or snack.

Ingredients

Scale
  • 1/4 cup chia seeds
  • 1 cup unsweetened almond milk (or other plant milk)
  • 2 tablespoons unsweetened cocoa powder
  • 2 tablespoons maple syrup (adjust to taste)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Combine the chia seeds, almond milk, cocoa powder, maple syrup, vanilla extract, and salt in a jar or bowl.
  2. Whisk or stir the mixture vigorously for about one minute to break up any clumps of cocoa powder and ensure the seeds are evenly distributed.
  3. Let the mixture sit on the counter for 5 minutes, then whisk again thoroughly. This second stir prevents the seeds from clumping at the bottom.
  4. Cover the container and refrigerate for at least 4 hours, or preferably overnight, until the pudding thickens to your desired consistency.
  5. Stir well before serving. Add extra milk if the pudding is too thick, or let it sit longer if it is too thin.

Notes

  • For a richer chocolate flavor, use full-fat coconut milk instead of almond milk.
  • Adjust the maple syrup amount based on your preference for sweetness. Start with less and add more before the final chill if needed.
  • If you prefer a smoother texture, blend the prepared pudding briefly in a high-speed blender before chilling.
  • Top with fresh berries, sliced banana, or chopped nuts before eating.
