Ingredients
Scale
2 ripe medium avocados
1/2 cup unsweetened cocoa powder or cacao powder
1/2 cup maple syrup or agave nectar
1/4 cup unsweetened plant milk (almond or soy recommended)
1 teaspoon vanilla extract
Pinch of sea salt
Instructions
Cut the avocados in half, remove the pits, and scoop the flesh into a high-speed food processor or blender.
Add the cocoa powder, maple syrup, plant milk, vanilla extract, and salt to the processor.
Blend the mixture until completely smooth. Stop frequently to scrape down the sides of the container.
Continue blending for several minutes until all lumps are gone and the texture is perfectly silky. You must process until no green specks remain.
Taste the mousse and adjust sweetness or cocoa powder if needed. Add one more tablespoon of plant milk if the mixture is too thick.
Divide the mousse into small serving dishes or ramekins.
Chill the mousse in the refrigerator for at least 1 hour before serving to allow it to firm up slightly.
Notes
Use very ripe avocados for the best, creamiest texture and mildest flavor.
For a deeper chocolate flavor, add 1/4 teaspoon of instant coffee powder.
If you prefer a thicker mousse, reduce the plant milk to 3 tablespoons initially.
Garnish with fresh berries or shaved dark chocolate before serving.
