A simple recipe for a satisfying vegan sandwich filling that substitutes traditional tuna salad using mashed chickpeas.

Ingredients

Scale
  • 1 (15-ounce) can chickpeas, rinsed and drained
  • 1/2 cup vegan mayonnaise
  • 2 tablespoons finely chopped celery
  • 1 tablespoon finely chopped red onion
  • 1 tablespoon Dijon mustard
  • 1 teaspoon apple cider vinegar
  • 1/4 teaspoon kelp powder (optional, for savory flavor)
  • 1/4 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 4 slices whole wheat bread or sourdough
  • Lettuce leaves for serving

Instructions

  1. Place the rinsed and drained chickpeas in a medium bowl.
  2. Use a potato masher or a fork to mash the chickpeas until they reach your desired consistency. Leave some texture for a chunky salad.
  3. Add the vegan mayonnaise, celery, red onion, Dijon mustard, apple cider vinegar, kelp powder (if using), and smoked paprika to the bowl.
  4. Mix all ingredients thoroughly until well combined and creamy.
  5. Season the salad generously with salt and black pepper. Taste and adjust seasonings as needed.
  6. To assemble the sandwich, place lettuce leaves on two slices of bread.
  7. Spoon half of the chickpea salad mixture onto the lettuce. Top with the remaining bread slices.
  8. Serve immediately or chill for later use.

Notes

  • For a gluten-free option, use gluten-free bread or serve the salad in large lettuce cups.
  • If you prefer a smoother texture, pulse the chickpeas briefly in a food processor before mixing in the other ingredients.
  • For extra tang, add 1 teaspoon of finely chopped capers along with the celery and onion.
  • This salad keeps well in the refrigerator for up to three days.
