Ingredients
Scale
1 cup rolled oats
1 ripe banana, mashed
1 cup plant milk (soy or almond recommended)
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
1 tablespoon maple syrup (optional)
1 teaspoon vanilla extract
1 tablespoon oil (for cooking)
Instructions
Place the rolled oats into a blender or food processor and blend until you achieve a fine flour consistency.
In a medium bowl, combine the oat flour, mashed banana, plant milk, baking powder, cinnamon, maple syrup (if using), and vanilla extract.
Mix the ingredients gently until just combined. Do not overmix; a few small lumps are acceptable. Let the batter rest for 5 minutes to thicken slightly.
Heat a non-stick skillet or griddle over medium heat. Lightly grease the surface with oil.
Pour 1/4 cup of batter onto the hot skillet for each pancake.
Cook for 3 to 4 minutes per side, until bubbles appear on the surface and the edges look set. Flip carefully and cook the second side until golden brown.
Serve immediately with your preferred toppings.
Notes
For thicker pancakes, reduce the amount of plant milk slightly.
If you prefer whole oats in your batter, substitute 1/2 cup of the oat flour with 1/2 cup of whole rolled oats.
Ripe bananas provide natural sweetness, reducing the need for added sugar.
