Bite-sized appetizers combining sweet potato, marshmallow, and bacon in a popper style format.

Ingredients

Scale
  • 1 large sweet potato (about 10 oz)
  • 1 cup miniature marshmallows
  • 4 slices bacon, cooked crisp and crumbled
  • 1 tablespoon butter, melted
  • 1 teaspoon brown sugar
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup cream cheese, softened

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a baking sheet.
  2. Peel and dice the sweet potato into small, uniform 1/2-inch cubes.
  3. Toss the sweet potato cubes with melted butter, brown sugar, cinnamon, and salt in a bowl.
  4. Spread the seasoned sweet potato cubes in a single layer on the prepared baking sheet.
  5. Bake for 15 minutes, or until the sweet potatoes are tender when pierced with a fork. Remove from the oven and let cool slightly.
  6. In a small bowl, mix the softened cream cheese with half of the crumbled bacon.
  7. Take one slightly cooled sweet potato cube and gently press a small amount of the cream cheese mixture into the center.
  8. Top the cream cheese mixture with one miniature marshmallow.
  9. Return the assembled bites to the baking sheet.
  10. Bake for an additional 5 to 7 minutes, or until the marshmallows are puffed and lightly golden brown. Watch closely to prevent burning.
  11. Remove from the oven and immediately sprinkle the remaining crumbled bacon over the tops of the marshmallow.
  12. Serve warm.

Notes

  • You can substitute smoked paprika for cinnamon for a more savory flavor profile.
  • If you prefer a crispier base, you can use a jalapeƱo popper shell instead of just the sweet potato cube.
  • These can be assembled ahead of time and refrigerated for up to 4 hours before the final baking step.
