A fresh and nutritious salad featuring cooked quinoa, fresh spinach, sliced strawberries, and a homemade poppyseed vinaigrette.

Ingredients

Scale
  • 1 cup dry quinoa
  • 2 cups water or vegetable broth
  • 5 ounces fresh baby spinach
  • 1 pint fresh strawberries, hulled and sliced
  • 1/2 cup sliced almonds, toasted
  • 1/4 cup red onion, thinly sliced
  • For the Dressing: 1/2 cup olive oil
  • For the Dressing: 1/4 cup apple cider vinegar
  • For the Dressing: 2 tablespoons honey or maple syrup
  • For the Dressing: 1 tablespoon Dijon mustard
  • For the Dressing: 1 teaspoon poppy seeds
  • For the Dressing: 1/4 teaspoon salt
  • For the Dressing: 1/8 teaspoon black pepper

Instructions

  1. Rinse the quinoa well under cold water. Combine quinoa and water or broth in a saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until all liquid is absorbed. Fluff with a fork and let cool completely.
  2. While the quinoa cools, prepare the dressing. In a small jar with a tight-fitting lid, combine the olive oil, apple cider vinegar, honey or maple syrup, Dijon mustard, poppy seeds, salt, and pepper. Shake vigorously until the dressing emulsifies.
  3. In a large bowl, combine the cooled quinoa, baby spinach, sliced strawberries, toasted almonds, and sliced red onion.
  4. Pour the poppyseed dressing over the salad ingredients. Toss gently until everything is lightly coated.
  5. Serve immediately or chill for later.

Notes

  • Toast the almonds by placing them in a dry skillet over medium heat for 3 to 5 minutes, stirring often until fragrant and lightly browned.
  • You can prepare the quinoa and the dressing up to two days ahead of time and store them separately in the refrigerator.
  • If making ahead, add the spinach just before serving to prevent wilting.
