- 2 cups fresh strawberries, diced
- 1 cup fresh kiwi, peeled and diced
- 1/4 cup red onion, finely diced
- 1/4 cup fresh cilantro, chopped
- 1 tablespoon lime juice
- 1 teaspoon honey (optional)
- Pinch of salt
- Wash and hull the strawberries. Dice the strawberries into small, uniform pieces.
- Peel the kiwi fruit and dice it into pieces similar in size to the strawberries.
- Finely dice the red onion. Chop the fresh cilantro.
- In a medium bowl, combine the diced strawberries, kiwi, red onion, and cilantro.
- Pour the lime juice over the fruit mixture. Add the honey, if using, and a pinch of salt.
- Gently stir all ingredients together until just combined. Avoid over-mixing to keep the fruit texture intact.
- Cover the bowl and chill in the refrigerator for at least 15 minutes before serving to allow the flavors to meld.
Notes
- Use ripe but firm fruit for the best texture. Overripe fruit will become mushy when mixed.
- For a slight kick, add 1/4 teaspoon of finely minced jalapeƱo, removing the seeds first.
- This salsa pairs well with cinnamon sugar pita chips or as a topping for grilled chicken or fish.
