A fresh, light salsa combining sweet strawberries, crisp cucumber, and bright lime juice. This recipe is quick to prepare and perfect for serving with chips or as a topping.

Ingredients

Scale
  • 2 cups fresh strawberries, diced
  • 1 large cucumber, seeded and diced
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons fresh lime juice
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 small jalapeño, seeded and minced (optional)

Instructions

  1. Wash and prepare all fresh produce. Dice the strawberries and cucumber into small, uniform pieces.
  2. In a medium bowl, combine the diced strawberries, cucumber, and chopped cilantro.
  3. If using, add the minced jalapeño to the bowl.
  4. In a small separate bowl, whisk together the lime juice, olive oil, salt, and pepper.
  5. Pour the lime dressing over the fruit and vegetable mixture.
  6. Gently fold all ingredients together until they are evenly coated.
  7. Taste the salsa and adjust salt or lime juice as needed.
  8. Cover the bowl and chill in the refrigerator for at least 15 minutes before serving to allow flavors to meld.

Notes

  • For a milder flavor, remove all seeds and white pith from the jalapeño before mincing.
  • If you do not have fresh cilantro, you can substitute with fresh mint for a different flavor profile.
  • This salsa tastes best when served the same day it is made.
