Prepare juicy chicken thighs coated in a thick, sweet, and spicy chili glaze. This recipe is simple to make and pairs perfectly with steamed rice for a satisfying weeknight dinner.

Ingredients

Scale
  • 6 bone-in, skin-on chicken thighs
  • 1 tablespoon olive oil
  • 1/2 cup sweet chili sauce
  • 1/4 cup soy sauce
  • 2 tablespoons honey or brown sugar
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated fresh ginger
  • 2 cloves garlic, minced
  • 1 teaspoon cornstarch mixed with 2 teaspoons cold water (slurry)
  • Cooked white or brown rice, for serving
  • Green onions, sliced, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with foil or parchment paper for easy cleanup.
  2. Pat the chicken thighs dry with paper towels. Rub them lightly with olive oil and season with salt and pepper. Place them skin-side up on the prepared baking sheet.
  3. In a small bowl, whisk together the sweet chili sauce, soy sauce, honey (or brown sugar), rice vinegar, ginger, and garlic.
  4. Brush half of the sauce mixture evenly over the chicken thighs.
  5. Bake the chicken for 25 minutes.
  6. While the chicken bakes, return the remaining sauce to the small bowl. Whisk in the cornstarch slurry.
  7. Remove the chicken from the oven. Brush the remaining sauce mixture over the thighs. Return the chicken to the oven and bake for another 10 to 15 minutes, or until the internal temperature reaches 165°F (74°C) and the glaze is thick and sticky.
  8. Let the chicken rest for 5 minutes before serving.
  9. Serve the sticky sweet chili chicken thighs over bowls of hot cooked rice. Garnish with sliced green onions.

Notes

  • For crispier skin, place the chicken on a wire rack set inside the baking sheet before baking.
  • You can prepare the sauce mixture ahead of time and store it in the refrigerator for up to three days.
  • If you prefer boneless, skinless thighs, reduce the total cooking time by about 8 to 10 minutes.
