Ingredients
Scale
1.5 lbs boneless, skinless chicken thighs or breasts, cut into 1-inch pieces
1 cup cooked white rice (for serving)
1 tablespoon vegetable oil
Salt and black pepper to taste
For the Sticky BBQ Sauce:
1/2 cup ketchup
1/4 cup honey
1/4 cup soy sauce
2 tablespoons apple cider vinegar
1 tablespoon brown sugar
1 teaspoon garlic powder
1/2 teaspoon ground ginger
1/4 teaspoon red pepper flakes (optional)
1 tablespoon cornstarch mixed with 2 tablespoons cold water (slurry)
Optional Garnishes:
2 green onions, sliced
1 teaspoon sesame seeds
Instructions
Prepare the rice according to package directions. Keep warm.
In a small bowl, whisk together the ketchup, honey, soy sauce, apple cider vinegar, brown sugar, garlic powder, ground ginger, and red pepper flakes (if using) to make the sauce base. Set aside.
Heat the vegetable oil in a large skillet over medium-high heat. Season the chicken pieces lightly with salt and pepper.
Add the chicken to the hot skillet and cook until browned on all sides and cooked through, about 6 to 8 minutes. Drain off any excess fat from the skillet.
Pour the prepared BBQ sauce base over the cooked chicken in the skillet. Bring the sauce to a simmer.
Stir the cornstarch slurry well and pour it slowly into the simmering sauce while stirring constantly.
Continue to cook, stirring, until the sauce thickens significantly and coats the chicken pieces evenly, about 1 to 2 minutes. This creates the sticky glaze.
Remove the skillet from the heat.
To assemble the bowls, divide the cooked rice among serving bowls. Top the rice with the sticky BBQ chicken.
Garnish with sliced green onions and sesame seeds, if desired. Serve immediately.
Notes
For a deeper flavor, marinate the chicken pieces in half of the sauce base for 30 minutes before cooking.
Use chicken thighs for juicier results.
Serve with steamed broccoli or shredded carrots for added vegetables.
