Ingredients
Scale
1 lb sirloin steak, cut into bite-sized pieces
2 medium sweet potatoes, peeled and cubed
1 tablespoon olive oil (for potatoes)
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
Salt and black pepper to taste
1 ripe avocado
1/2 cup fresh cilantro leaves
2 tablespoons lime juice
2 tablespoons water (or more, for thinning)
1 tablespoon olive oil (for drizzle)
Optional: 1 cup mixed greens or cooked quinoa for the base
Instructions
Preheat your oven to 400°F (200°C). Toss the cubed sweet potatoes with 1 tablespoon of olive oil, salt, and pepper. Spread them on a baking sheet and roast for 20 to 25 minutes, flipping halfway, until tender.
While potatoes roast, season the steak pieces with smoked paprika, garlic powder, salt, and pepper.
Heat a large skillet over medium-high heat. Add the seasoned steak and cook for 3 to 5 minutes per side, depending on desired doneness. Remove the steak from the skillet and set aside.
Prepare the drizzle: Combine the avocado, cilantro, lime juice, 2 tablespoons of water, and 1 tablespoon of olive oil in a food processor or blender. Blend until smooth, adding more water one teaspoon at a time until you reach a pourable consistency.
Assemble the bowls: Place a base of mixed greens or quinoa (if using) in each bowl. Top with the roasted sweet potatoes and cooked steak pieces.
Drizzle generously with the avocado-cilantro sauce before serving.
Notes
You can cook the steak whole and slice it after resting, instead of cubing it beforehand.
For meal prep, store the steak, potatoes, and drizzle separately and assemble just before eating.
Use a high-powered blender for the smoothest drizzle texture.
