A hot, cheesy baked dip combining spinach, kale, and the spicy flavor of jalapeño poppers.

Ingredients

Scale
  • 8 ounces cream cheese, softened
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded sharp cheddar cheese
  • 1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
  • 1 cup chopped fresh kale, stems removed
  • 1/2 cup diced pickled jalapeños, drained
  • 1/4 cup finely chopped fresh jalapeño (seeds removed for less heat)
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup panko breadcrumbs
  • 2 tablespoons melted butter

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease an 8×8 inch baking dish or a similar sized oven-safe skillet.
  2. In a large bowl, combine the softened cream cheese, sour cream, and mayonnaise until smooth.
  3. Stir in the Monterey Jack cheese, cheddar cheese, dried spinach, kale, diced pickled jalapeños, fresh chopped jalapeño, minced garlic, salt, and pepper. Mix until all ingredients are evenly incorporated.
  4. Spread the mixture evenly into the prepared baking dish.
  5. In a small bowl, mix the panko breadcrumbs with the melted butter. Sprinkle this mixture evenly over the top of the dip.
  6. Bake for 20 to 25 minutes, or until the dip is hot throughout and the topping is golden brown.
  7. Let the dip cool for 5 minutes before serving hot with tortilla chips, crackers, or vegetable sticks.

Notes

  • If you prefer a milder dip, use only pickled jalapeños and omit the fresh jalapeño.
  • You can prepare the dip mixture up to 24 hours ahead of time; cover and refrigerate, then add the topping just before baking.
  • For a richer flavor, substitute half of the sour cream with plain Greek yogurt.
