- 2 large ripe mangoes, diced
- 1/2 red onion, finely chopped
- 1 jalapeño pepper, seeded and minced (use more for extra heat)
- 1/2 cup chopped fresh cilantro
- Juice of 1 lime
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Peel and dice the mangoes into small, uniform pieces. Place them in a medium bowl.
- Finely chop the red onion and mince the jalapeño. Add both to the bowl with the mangoes.
- Chop the fresh cilantro and add it to the mixture.
- Squeeze the fresh lime juice over the ingredients.
- Sprinkle with salt and pepper.
- Gently stir all ingredients together until just combined. Avoid overmixing to keep the mango pieces intact.
- Taste the salsa and adjust lime juice or salt as needed.
- Cover the bowl and chill for at least 15 minutes before serving to allow the flavors to meld.
Notes
- For a milder salsa, remove all seeds and white membranes from the jalapeño.
- If you do not have fresh lime, you can substitute with bottled lime juice, but fresh is recommended.
- This salsa pairs well with grilled white fish, chicken, or pork chops.
