Ingredients
Scale
1 cup prepared pimento cheese
1 cup sour cream
1/2 cup mayonnaise
1 packet (1 oz) taco seasoning mix
1 cup shredded Monterey Jack cheese
1 cup chopped Roma tomatoes
1/2 cup sliced black olives
1/2 cup chopped green onions
1/4 cup pickled jalapeño slices (optional)
Instructions
Prepare the pimento cheese base: Spread the 1 cup of prepared pimento cheese evenly across the bottom of a 9-inch pie plate or shallow serving dish.
Mix the second layer: In a medium bowl, combine the sour cream, mayonnaise, and taco seasoning mix until fully blended. Spread this mixture evenly over the pimento cheese layer.
Add the cheese layer: Sprinkle the shredded Monterey Jack cheese over the sour cream mixture.
Add the vegetable layers: Distribute the chopped Roma tomatoes evenly over the cheese.
Add the olives and onions: Sprinkle the sliced black olives and chopped green onions over the tomatoes.
Top with optional heat: If using, scatter the pickled jalapeño slices over the top layer.
Chill the dip for at least 1 hour before serving to allow the flavors to set.
Notes
You can make the pimento cheese base layer and the sour cream mixture up to 24 hours in advance. Keep them separate and assemble the dip just before chilling.
For a more Southern flavor, use sharp cheddar cheese in your pimento cheese base.
Serve with sturdy tortilla chips, sturdy crackers, or vegetable sticks.
This dip is excellent for tailgates and potlucks because it holds up well when kept cool.
