Follow these steps to make simple roasted potatoes with crispy outsides and fluffy insides, perfect as a hearty side dish.

Ingredients

Scale
  • 2 lbs Russet or Maris Piper potatoes, peeled and cut into 1.5-inch pieces
  • 4 tablespoons olive oil or rendered fat
  • 1 teaspoon coarse salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Place the cut potatoes in a large pot and cover them with cold, salted water. Bring the water to a boil and cook the potatoes for 8 minutes. They should just start to soften on the edges.
  3. Drain the potatoes well in a colander. Shake the colander gently to rough up the edges of the potatoes; this helps them crisp up.
  4. Place the rough-edged potatoes in a large roasting pan. Drizzle with the oil or fat and sprinkle with salt, pepper, and thyme. Toss everything together until the potatoes are coated.
  5. Spread the potatoes in a single layer in the roasting pan. Do not overcrowd the pan.
  6. Roast for 30 minutes.
  7. Remove the pan from the oven and carefully turn the potatoes with a spatula.
  8. Return the pan to the oven and roast for another 15 to 20 minutes, or until they are deep golden brown and crisp.
  9. Serve immediately.

Notes

  • For extra crispiness, use duck fat or beef dripping instead of olive oil.
  • If you want a slight onion flavor, add one roughly chopped onion to the pan during the last 20 minutes of roasting.
