A simple, minimal-cleanup recipe for roasting Italian sausage with bell peppers and onions on one sheet pan.

Ingredients

Scale
  • 1.5 lb Italian sausage links (sweet or hot)
  • 3 large bell peppers (any color), cut into 1-inch strips
  • 1 large yellow onion, cut into thick wedges
  • 2 tablespoons olive oil
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a large, rimmed baking sheet with parchment paper for easy cleanup.
  2. In a large bowl, combine the cut bell peppers and onion wedges. Drizzle with olive oil, Italian seasoning, garlic powder, salt, and pepper. Toss until the vegetables are evenly coated.
  3. Arrange the seasoned vegetables in a single layer on the prepared baking sheet.
  4. Place the sausage links among the vegetables, ensuring they are not completely crowded. If you have too much food, use two sheets.
  5. Roast for 25 to 30 minutes, flipping the sausage halfway through the cooking time. The vegetables should be tender and slightly caramelized, and the sausage should reach an internal temperature of 160 degrees Fahrenheit (71 degrees Celsius).
  6. Remove from the oven and serve immediately.

Notes

  • For extra flavor, you can brush the sausage lightly with balsamic vinegar during the last 10 minutes of roasting.
  • If you use pre-cooked sausage like Kielbasa, reduce the cooking time by about 10 minutes.
  • Serve this dish on hoagie rolls, over cooked rice, or alongside roasted potatoes for a complete meal.
