Ingredients
Scale
2 lbs rainbow carrots, scrubbed and trimmed
2 tablespoons olive oil
2 tablespoons honey
1 teaspoon fresh thyme leaves
1/2 teaspoon salt
1/4 teaspoon black pepper
Zest of 1/2 orange (optional)
Instructions
Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a large, rimmed baking sheet with parchment paper for easy cleanup.
If carrots are thick, cut them lengthwise so they are roughly uniform in thickness, about 1/2 inch wide. Keep smaller carrots whole.
In a large bowl, toss the prepared carrots with the olive oil, salt, and pepper until they are evenly coated.
Spread the carrots in a single layer on the prepared baking sheet. Do not overcrowd the pan; use two sheets if necessary for better roasting.
Roast for 15 minutes.
While the carrots roast, whisk together the honey and fresh thyme leaves in a small bowl.
Remove the carrots from the oven. Drizzle the honey-thyme mixture over the carrots and toss them gently on the pan to coat.
Return the carrots to the oven and roast for another 10 to 15 minutes, or until the carrots are tender when pierced with a fork and slightly caramelized.
Remove from the oven. If using, sprinkle with fresh orange zest before serving.
Notes
For the best color retention, avoid overcooking the carrots.
If your carrots vary greatly in size, cut the larger ones smaller so they finish cooking at the same time as the smaller ones.
You can substitute maple syrup for honey if you prefer.
