Ingredients
Scale
4 bone-in pork chops (about 1 inch thick)
2 tablespoons olive oil
4 cloves garlic, minced
1 large lemon, zested and juiced
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
1 pound small potatoes, halved
1 pound broccoli florets
Instructions
Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a large rimmed baking sheet with parchment paper.
In a small bowl, whisk together the olive oil, minced garlic, lemon zest, lemon juice, oregano, salt, and pepper to make the marinade.
Place the pork chops, halved potatoes, and broccoli florets onto the prepared sheet pan.
Pour the marinade over the pork chops and vegetables. Use your hands to toss everything until it is evenly coated. Arrange the pork chops in a single layer, ensuring vegetables surround them.
Bake for 20 to 25 minutes, or until the internal temperature of the pork chops reaches 145 degrees Fahrenheit (63 degrees Celsius) and the vegetables are tender.
Remove from the oven and let the pork chops rest for 5 minutes before serving immediately with the roasted vegetables.
Notes
For extra flavor, you can add 1 tablespoon of fresh chopped parsley to the marinade.
If your pork chops are thicker than 1 inch, you may need to increase the cooking time by 5 to 7 minutes.
Use small, uniform potatoes so they cook at the same rate as the pork.
