Ingredients
Scale
1 pound large shrimp, peeled and deveined
1 pound broccoli florets
4 tablespoons unsalted butter, melted
4 cloves garlic, minced
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon red pepper flakes (optional)
2 tablespoons fresh lemon juice
2 tablespoons fresh parsley, chopped
Instructions
Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
In a small bowl, whisk together the melted butter, minced garlic, olive oil, salt, pepper, and red pepper flakes if you are using them.
Place the broccoli florets on the prepared baking sheet. Drizzle half of the garlic butter mixture over the broccoli and toss to coat evenly. Spread the broccoli into a single layer.
Roast the broccoli for 8 minutes. This gives the broccoli a head start.
While the broccoli roasts, place the shrimp in a medium bowl. Pour the remaining half of the garlic butter mixture over the shrimp and toss gently to coat.
Remove the baking sheet from the oven. Push the broccoli to one side of the pan and add the seasoned shrimp to the empty space, spreading them into a single layer.
Return the sheet pan to the oven and bake for another 6 to 8 minutes, or until the shrimp are pink and opaque and the broccoli is tender-crisp. Do not overcook the shrimp.
Remove the pan from the oven. Drizzle the fresh lemon juice over the shrimp and broccoli. Sprinkle with fresh parsley before serving.
Notes
For tender-crisp broccoli, cut the florets into uniform, medium sizes.
If your shrimp are very large, you may need to add them to the pan at the same time as the broccoli, but watch closely to prevent overcooking.
Serve this dish over rice, quinoa, or zucchini noodles for a complete meal.
