A recipe for a rich, savory cheese fondue using sharp cheddar cheese and tart apple cider for a distinct autumn flavor.

Ingredients

Scale
  • 1 pound sharp cheddar cheese, grated
  • 1 cup dry apple cider
  • 1 tablespoon cornstarch
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon ground nutmeg
  • Pinch of cayenne pepper
  • 1 clove garlic, halved
  • 1 loaf crusty bread, cut into cubes
  • 1 apple, cut into slices
  • 1 cup broccoli florets
  • 1 cup small cooked potatoes

Instructions

  1. Rub the inside of your fondue pot or heavy-bottomed saucepan with the cut garlic clove. Discard the garlic.
  2. In a small bowl, whisk the cornstarch into the apple cider until completely dissolved.
  3. Pour the cider mixture into the pot and heat over medium-low heat until it just begins to simmer.
  4. Reduce the heat to low. Add the grated cheddar cheese one handful at a time, stirring constantly in a figure-eight motion until each addition is melted and smooth before adding the next batch. Do not let the mixture boil.
  5. Once all the cheese is melted, stir in the Dijon mustard, nutmeg, and cayenne pepper. Continue stirring until the fondue is smooth and creamy.
  6. Transfer the fondue to a preheated fondue pot set over a low flame or warming element.
  7. Serve immediately with bread cubes, apple slices, broccoli florets, and small cooked potatoes for dipping.

Notes

  • Grate the cheese yourself; pre-shredded cheese often contains anti-caking agents that prevent smooth melting.
  • If the fondue becomes too thick while serving, stir in a tablespoon of warm apple cider to thin it slightly.
  • For a richer flavor, substitute half of the apple cider with dry white wine.
