A quick and hearty recipe for scrambled eggs featuring wilted kale and savory minced ham, perfect for a fast, high-protein breakfast.

Ingredients

Scale
  • 4 large eggs
  • 1 tablespoon milk or water
  • 1 teaspoon butter or oil
  • 1/2 cup fresh kale, stems removed and chopped
  • 1/4 cup minced cooked ham
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Whisk the eggs and milk or water together in a bowl. Season lightly with salt and pepper.
  2. Heat the butter or oil in a non-stick skillet over medium heat.
  3. Add the chopped kale to the skillet. Cook for 2 to 3 minutes until the kale wilts down.
  4. Add the minced ham to the skillet and cook for 1 minute until heated through.
  5. Pour the egg mixture over the kale and ham.
  6. Let the eggs set slightly around the edges, about 30 seconds.
  7. Gently push the cooked egg from the edges toward the center, tilting the pan so the uncooked egg flows underneath.
  8. Continue this process until the eggs are mostly set but still slightly moist. Do not overcook.
  9. Remove from heat immediately and serve.

Notes

  • For richer flavor, use a small amount of grated Parmesan cheese mixed with the eggs before cooking.
  • If your ham is very salty, skip adding extra salt to the eggs until you taste the final dish.
  • Cook the kale separately first to ensure it softens properly before adding the eggs.
