Ingredients
Scale
1 pound cremini mushrooms, stems removed
1 pound bulk Italian sausage, casings removed
4 ounces cream cheese, softened
1/2 cup grated Parmesan cheese, plus more for topping
1/4 cup finely chopped fresh parsley
2 cloves garlic, minced
1/4 teaspoon black pepper
1/2 cup panko breadcrumbs (optional, for texture)
Instructions
Preheat your oven to 375 degrees Fahrenheit. Lightly wipe the mushroom caps clean with a damp paper towel. Arrange them cavity-side up on a baking sheet.
In a medium bowl, cook the Italian sausage in a skillet over medium heat, breaking it up as it cooks. Drain off any excess grease completely.
In the same skillet (off heat), combine the cooked sausage, softened cream cheese, 1/2 cup Parmesan cheese, parsley, minced garlic, and black pepper. Mix well until everything is fully combined. If you are using breadcrumbs for a less low-carb option, stir them in now.
Spoon the sausage mixture evenly into the mushroom caps, mounding the filling slightly.
Bake for 20 to 25 minutes. For smaller mushrooms, check at 18 minutes. The filling should be hot throughout and lightly browned.
Sprinkle a little extra Parmesan cheese over the tops during the last 5 minutes of baking, if desired.
Remove from the oven and let them cool for a few minutes before serving. These make great holiday appetizer platters additions.
Notes
For a low-carb option, skip the panko breadcrumbs entirely. The filling will still hold together well.
You can prepare these stuffed mushrooms up to 24 hours ahead. Cover the assembled mushrooms tightly with plastic wrap and refrigerate. Add about 5 minutes to the baking time if baking directly from the refrigerator.
If you want to try air fryer stuffed mushrooms, cook them at 350 degrees Fahrenheit for 10 to 12 minutes, checking for doneness.
To keep these warm for a party, place them on a baking sheet and keep them in a 200 degree Fahrenheit oven for up to one hour.
