Make simple, flaky salmon patties and serve them with a bright, tangy cream sauce.

Ingredients

Scale
  • 1 (14.75 ounce) can salmon, drained and skin/bones removed
  • 1 large egg, lightly beaten
  • 1/2 cup breadcrumbs
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon Dijon mustard
  • 1 teaspoon lemon zest
  • 1/4 teaspoon black pepper
  • 2 tablespoons vegetable oil for frying
  • 1/2 cup sour cream or plain Greek yogurt
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon capers, drained and chopped
  • 1 tablespoon fresh dill, chopped
  • 1/4 teaspoon salt

Instructions

  1. In a medium bowl, flake the drained salmon using a fork. Remove any remaining bones or skin.
  2. Add the beaten egg, breadcrumbs, parsley, Dijon mustard, lemon zest, and pepper to the salmon. Mix gently until just combined. Do not overmix.
  3. Form the mixture into 8 equal-sized patties, about 1 inch thick.
  4. Prepare the sauce: In a small bowl, whisk together the sour cream (or yogurt), lemon juice, capers, dill, and salt until smooth. Set aside.
  5. Heat the vegetable oil in a large skillet over medium heat.
  6. Carefully place the salmon patties in the hot oil, ensuring not to crowd the pan. You may need to cook them in batches.
  7. Cook for 3 to 4 minutes per side, until golden brown and heated through.
  8. Remove the patties from the skillet and place them on a paper towel-lined plate to drain excess oil.
  9. Serve the hot salmon patties immediately with the tangy creamy sauce on the side or spooned over the top.

Notes

  • For a firmer patty, chill the formed patties in the refrigerator for 15 minutes before cooking.
  • You can substitute canned tuna for salmon if desired.
  • If you prefer baking, place patties on a parchment-lined sheet and bake at 400 degrees Fahrenheit for 15 minutes, flipping halfway through.
