A collection of five straightforward recipes using coffee, covering drinks, desserts, and a simple rub.

Ingredients

Scale
  • 1 cup strong brewed coffee, cooled
  • 1/2 cup heavy cream
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 8 ounces mascarpone cheese, softened (for Tiramisu)
  • 1 package ladyfingers (for Tiramisu)
  • 1/4 cup unsweetened cocoa powder (for dusting)
  • 1 cup all-purpose flour (for Muffins)
  • 1/2 cup butter, softened (for Muffins)
  • 1/2 cup brown sugar (for Muffins)
  • 1 large egg (for Muffins)
  • 1 teaspoon baking powder (for Muffins)
  • 1 tablespoon instant coffee granules (for Rub)
  • 1 teaspoon smoked paprika (for Rub)
  • 1/2 teaspoon garlic powder (for Rub)
  • 1 pound steak or pork chops (for Rub)

Instructions

  1. Make the Coffee Whipped Cream: Beat the heavy cream, cooled coffee, granulated sugar, and vanilla extract together until soft peaks form. Store chilled.
  2. Prepare Simple Tiramisu (No Bake): Dip ladyfingers briefly into leftover strong coffee (unsweetened). Layer the dipped ladyfingers and the mascarpone mixture in a small dish. Dust the top generously with cocoa powder. Chill for at least 4 hours.
  3. Bake Coffee Muffins: Preheat oven to 375°F (190°C). Cream butter and brown sugar. Beat in the egg. Mix flour, baking powder, and 1 tablespoon of instant coffee granules. Combine wet and dry ingredients. Spoon batter into muffin tins. Bake for 18-20 minutes until a toothpick comes out clean.
  4. Make a Basic Coffee Rub: Mix the instant coffee granules, smoked paprika, and garlic powder thoroughly in a small bowl. Rub this mixture evenly over your steak or pork chops before cooking.
  5. Serve Iced Coffee: Fill a glass with ice. Pour 1/2 cup of strong, cooled coffee over the ice. Top with a dollop of the prepared coffee whipped cream.

Notes

  • For the Tiramisu, use espresso if available for a deeper coffee flavor.
  • When making the muffins, dissolve the instant coffee granules in one teaspoon of hot water first before adding to the batter for better distribution.
  • The coffee rub works well on beef brisket or pork shoulder if you plan on slow cooking.
