You will love this quick, crunchy raw carrot salad. It is inspired by the viral TikTok recipe and features thin carrot ribbons tossed in a bright, tangy sesame lime dressing. This healthy carrot side dish comes together in under 10 minutes and is perfect for meal prep or a light lunch.

Ingredients

Scale
  • 4 large carrots, peeled
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon honey or maple syrup
  • 1/2 teaspoon Dijon mustard
  • 1/4 teaspoon garlic powder
  • Pinch of red pepper flakes (optional)
  • 1 teaspoon sesame seeds, toasted
  • 1 green onion, thinly sliced (for garnish)

Instructions

  1. Prepare the carrots: Use a vegetable peeler to shave the carrots into long, thin ribbons. Stop when you reach the core. Place the carrot ribbons in a medium bowl.
  2. Make the dressing: In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey (or maple syrup), Dijon mustard, garlic powder, and red pepper flakes, if using. Mix until the honey is fully dissolved.
  3. Dress the salad: Pour the dressing over the carrot ribbons. Toss gently but thoroughly until all the ribbons are coated.
  4. Rest briefly: Let the salad sit for 5 minutes. This allows the carrots to soften slightly and absorb the tangy flavor.
  5. Finish and serve: Sprinkle the toasted sesame seeds and sliced green onion over the salad. Serve immediately as a crunchy fresh salad or save it for quick meal prep later.

Notes

  • For the best ribbon texture, use a standard vegetable peeler and work slowly.
  • If you want a salad for hormone balance, ensure you use high-quality olive oil in place of some sesame oil, or add a teaspoon of apple cider vinegar to the dressing.
  • This salad tastes best when eaten the same day, but it holds up well in the refrigerator for up to 2 days.
