A recipe for delicate butter cookies filled with homemade raspberry chia seed jam.

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup fresh or frozen raspberries
  • 1 tablespoon chia seeds
  • 1 tablespoon water
  • 1 tablespoon lemon juice

Instructions

  1. Make the jam: Combine raspberries, chia seeds, water, and lemon juice in a small saucepan. Heat over medium heat, stirring occasionally, until the mixture thickens, about 8 to 10 minutes. Remove from heat and let cool completely.
  2. Make the cookie dough: In a large bowl, cream together the softened butter and sugar until light and fluffy. Beat in the egg yolk and vanilla extract.
  3. In a separate bowl, whisk together the flour and salt. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
  4. Shape the dough: Roll the dough into 1-inch balls. Place them on baking sheets lined with parchment paper.
  5. Make the indentations: Use your thumb or the back of a small measuring spoon to press a deep well into the center of each dough ball.
  6. Fill the cookies: Spoon about 1/2 teaspoon of the cooled raspberry chia jam into each indentation.
  7. Bake: Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Bake for 12 to 15 minutes, or until the edges are lightly golden brown.
  8. Cool: Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For a firmer jam that holds its shape better during baking, chill the jam for at least 30 minutes before filling the cookies.
  • If the dough feels too soft, chill it for 15 minutes before shaping the balls.
  • You can dust the finished, cooled cookies with powdered sugar if desired.
