Ingredients
Scale
3 large sweet potatoes
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
2 cups cooked pulled pork (BBQ style)
1/2 cup shredded sharp cheddar cheese
1/4 cup sour cream or Greek yogurt
2 tablespoons chopped fresh chives or green onion
1/4 cup coleslaw mix (optional topping)
Instructions
Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a baking sheet with parchment paper.
Wash the sweet potatoes well. Trim the ends. Slice each potato crosswise into rounds approximately 3/4 inch thick. You should get about 6 to 8 rounds per potato.
Place the sweet potato rounds on the prepared baking sheet. Brush both sides lightly with olive oil and sprinkle evenly with salt and pepper.
Bake the sweet potato rounds for 20 to 25 minutes, flipping them halfway through, until they are tender when pierced with a fork.
While the potatoes bake, warm the pulled pork gently if it is cold. If the pork is not already sauced, mix it with 2 to 3 tablespoons of your preferred BBQ sauce.
Remove the sweet potato rounds from the oven. Place them on a serving platter.
Top each sweet potato round with a spoonful of the warmed pulled pork.
Sprinkle the shredded cheese over the pork on each bite. Return the platter to the oven for 2 to 3 minutes, just until the cheese melts.
Remove from the oven. Top each bite with a small dollop of sour cream or yogurt, and then sprinkle with fresh chives. Add coleslaw if desired.
Notes
You can prepare the sweet potato rounds ahead of time and reheat them before loading.
For a quicker method, use a microwave to soften the sweet potato rounds slightly before roasting for a shorter time.
If you prefer a tangier topping, substitute the coleslaw with a small amount of pickled red onion.
