Ingredients
Scale
1/2 cup oat flour
1 scoop vanilla protein powder
1/2 teaspoon baking powder
1/4 teaspoon cinnamon
1 large egg white
1/4 cup unsweetened almond milk
1/2 teaspoon vanilla extract
Cooking spray
1/2 cup plain Greek yogurt
1/2 cup mixed fresh berries (blueberries, raspberries)
1 teaspoon maple syrup (optional)
Instructions
In a small bowl, whisk together the oat flour, protein powder, baking powder, and cinnamon.
In a separate bowl, whisk the egg white, almond milk, and vanilla extract until combined.
Pour the wet ingredients into the dry ingredients and mix until just combined. The batter will be thick. Do not overmix.
Heat a non-stick skillet over medium heat and lightly coat with cooking spray.
Drop small spoonfuls (about 1 tablespoon each) of batter onto the hot skillet to form mini pancakes. Cook for 2-3 minutes per side until golden brown and cooked through. You should have about 8-10 small pancakes.
To assemble the bowl, place half of the mini pancakes in the bottom of a serving bowl.
Top the pancakes with the Greek yogurt.
Arrange the remaining mini pancakes on top of the yogurt layer.
Top with the mixed fresh berries. Drizzle with maple syrup if you are using it.
Serve immediately.
Notes
For a thicker, more scoopable batter, add 1 teaspoon of chia seeds to the mix and let it sit for 5 minutes before cooking.
You can prepare the pancakes ahead of time and store them in the refrigerator for up to 3 days for quick assembly.
Substitute any berry type you prefer, or use frozen berries warmed slightly.
