Ingredients
Scale
12 large eggs
1 cup cottage cheese (low fat or full fat)
1/2 cup milk (any kind)
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup cooked, chopped protein (e.g., ham, chicken, or turkey bacon)
1/2 cup shredded cheese (e.g., cheddar or Monterey Jack)
1/4 cup chopped vegetables (e.g., spinach, bell peppers)
Instructions
Preheat your oven to 350°F (175°C). Lightly grease a 12-cup muffin tin or silicone egg bite mold.
In a large bowl, whisk the eggs, cottage cheese, and milk until completely smooth. This step helps create a fluffy texture.
Stir in the salt and pepper.
Divide the chopped protein, shredded cheese, and vegetables evenly among the prepared muffin cups.
Carefully pour the egg mixture over the fillings in each cup, filling them about three-quarters full.
Bake for 18 to 22 minutes, or until the egg bites are set and a toothpick inserted near the center comes out clean.
Let the egg bites cool in the tin for 5 minutes before removing them.
For meal prep, cool completely before storing in an airtight container in the refrigerator for up to 4 days or in the freezer for up to 2 months.
Notes
For the fluffiest texture, blend the cottage cheese with the eggs and milk until very smooth before adding other ingredients.
If using an Instant Pot, cook the bites in silicone molds placed on a trivet with 1 cup of water for 8 minutes on high pressure, followed by a 5-minute natural pressure release.
To reheat, microwave individual bites for 30 to 60 seconds.
