Ingredients
Scale
1 pound asparagus, tough ends removed, cut into 2-inch tips
8 ounces thinly sliced prosciutto, cut in half lengthwise
2 tablespoons olive oil
1/4 teaspoon black pepper
1/4 cup balsamic vinegar
Instructions
Preheat your oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper.
Toss the asparagus tips with olive oil and black pepper in a bowl.
Take one strip of prosciutto and wrap it tightly around the center of 3 or 4 asparagus tips. Place the wrapped bundles seam-side down on the prepared baking sheet.
Bake for 12 to 15 minutes, or until the prosciutto is crisp and the asparagus is tender-crisp.
While the asparagus bakes, prepare the glaze: Pour the balsamic vinegar into a small saucepan. Bring to a simmer over medium heat. Reduce heat to low and cook, stirring occasionally, until the vinegar thickens enough to coat the back of a spoon, about 5 to 8 minutes.
Remove the asparagus from the oven. Arrange on a serving platter and drizzle evenly with the balsamic glaze before serving.
Notes
For extra flavor, sprinkle a little grated Parmesan cheese over the bundles during the last 3 minutes of baking.
If you prefer grilling, cook over medium heat for 2 to 3 minutes per side until the prosciutto is browned.
Use only the tender tips of the asparagus for the best texture in this recipe.
