Make these simple, cheesy pizza muffins perfect for quick snacks, party appetizers, or packed lunches. They freeze well and your family will love these kid friendly pizza snacks.

Ingredients

Scale
  • 1 3/4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 cup shredded mozzarella cheese
  • 1/2 cup mini pepperoni slices
  • 1/2 cup pizza sauce

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Line a 12-cup muffin tin with paper liners or grease well.
  2. In a large bowl, whisk together the flour, baking powder, salt, pepper, and Parmesan cheese.
  3. In a separate medium bowl, whisk together the milk, vegetable oil, and egg until combined.
  4. Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix. A few lumps are fine.
  5. Gently fold in the mozzarella cheese and mini pepperoni slices.
  6. Spoon the batter evenly into the prepared muffin cups, filling each about two-thirds full.
  7. Place about 1 teaspoon of pizza sauce on top of the batter in each cup. You can gently swirl it in slightly with a toothpick if you wish.
  8. Bake for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the pizza muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For freezer lunches, cool the mini pizza muffins completely, then place them in a freezer-safe bag. Reheat in the microwave or toaster oven when ready to eat.
  • You can substitute the pepperoni with cooked, crumbled sausage or chopped cooked ham for variety.
  • If you want a richer flavor, use buttermilk instead of regular milk.
