Ingredients
Scale
4 (6 ounce) salmon fillets, skin on or off
1 pound fresh asparagus, tough ends trimmed
4 tablespoons olive oil
4 cloves garlic, minced
1 large lemon, thinly sliced, plus 2 tablespoons fresh lemon juice
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Preheat your oven to 400 degrees Fahrenheit. Line a large rimmed baking sheet with parchment paper for easier cleanup.
Place the trimmed asparagus on one side of the prepared baking sheet. Drizzle with 1 tablespoon of olive oil, sprinkle with a pinch of salt and pepper, and toss to coat. Spread the asparagus into a single layer.
Place the salmon fillets on the other side of the baking sheet, leaving space between the fish and the asparagus.
In a small bowl, whisk together the remaining 3 tablespoons of olive oil, minced garlic, lemon juice, and dried oregano.
Spoon the lemon garlic mixture evenly over the top of each salmon fillet. Season the salmon with the remaining salt and pepper.
Arrange the thin lemon slices on top of the salmon fillets.
Bake for 12 to 15 minutes, or until the salmon is opaque and flakes easily with a fork, and the asparagus is tender-crisp. Cooking time depends on the thickness of your salmon.
Remove from the oven and serve immediately directly from the pan.
Notes
For extra flavor, you can substitute butter for 2 tablespoons of the olive oil in the sauce mixture.
If your asparagus spears are very thick, toss them with the salmon for the first 5 minutes of baking before adding the fish, or blanch them briefly before placing them on the pan.
You can substitute broccoli florets for the asparagus if desired, adjusting the cook time slightly if needed.
