Make a complete dinner with steak bites and potatoes cooked together in one pan using a rich garlic butter sauce.

Ingredients

Scale
  • 1.5 lb sirloin steak, cut into 1-inch cubes
  • 1.5 lb small Yukon Gold potatoes, quartered
  • 1 medium yellow onion, cut into wedges
  • 1 cup broccoli florets
  • 6 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Line a large rimmed baking sheet with parchment paper for easier cleanup.
  2. In a large bowl, toss the quartered potatoes with 1 tablespoon of olive oil, half of the salt, and half of the pepper. Spread the potatoes in a single layer on the prepared baking sheet.
  3. Roast the potatoes for 15 minutes while you prepare the steak and sauce.
  4. While potatoes roast, place the cubed steak, onion wedges, and broccoli florets in the same bowl used for the potatoes. Add the remaining 1 tablespoon of olive oil, the remaining salt, and pepper. Toss to coat.
  5. After the potatoes have roasted for 15 minutes, remove the pan from the oven. Push the potatoes to one side of the pan. Add the steak, onion, and broccoli mixture to the empty side of the pan.
  6. In a small saucepan over low heat, melt the butter. Add the minced garlic and Italian seasoning. Cook for 1 minute until fragrant, stirring constantly. Do not let the garlic brown.
  7. Pour half of the garlic butter mixture evenly over the potatoes and the other half over the steak and vegetables. Toss the steak and vegetables gently on the pan to coat.
  8. Return the pan to the oven and roast for another 10 to 15 minutes, or until the steak reaches your desired doneness (medium-rare is about 130 degrees Fahrenheit internal temperature) and the potatoes are tender.
  9. Remove the pan from the oven. Sprinkle with fresh parsley. Drizzle any remaining garlic butter over the entire dish before serving immediately.

Notes

  • Use a cast iron skillet instead of a baking sheet if you prefer to start on the stovetop before transferring to the oven.
  • For crispier potatoes, cut them smaller or roast them alone for an extra 5 minutes before adding the steak mixture.
  • You can substitute asparagus spears for broccoli if desired; add them at the same time as the steak.
