Ingredients
Scale
3 large ripe bananas
1 cup semi-sweet chocolate chips
1 tablespoon coconut oil
1/4 cup chopped peanuts or sprinkles (optional topping)
Instructions
Peel the bananas and slice them into rounds, about 1/2 inch thick. You should get about 20 to 24 slices.
Place the banana slices on a baking sheet lined with parchment paper.
Freeze the banana slices for at least 1 hour until solid.
In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring well after each interval, until the chocolate is smooth and fully melted.
Remove the frozen banana slices from the freezer. Dip each slice halfway or fully into the melted chocolate, allowing excess chocolate to drip off.
Immediately sprinkle the top with chopped nuts or sprinkles, if using.
Return the coated bites to the parchment-lined baking sheet.
Freeze for another 15 minutes, or until the chocolate coating is firm. Store leftovers in an airtight container in the freezer.
Notes
Use good quality chocolate for the best flavor coating.
If you want a thinner coating, add a teaspoon more coconut oil to the melted chocolate.
For a different flavor, substitute peanut butter for half of the chocolate chips in the melting step.
