Make quick, individual dessert bites using fresh strawberries filled with a sweet, creamy, no-bake cheesecake mixture.

Ingredients

Scale
  • 1 pound large fresh strawberries
  • 8 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon heavy cream
  • Optional topping: Lemon zest or finely chopped nuts

Instructions

  1. Wash and thoroughly dry the strawberries. Carefully slice off the green tops and use a small spoon or melon baller to hollow out the center of each strawberry, creating a cup for the filling. Set the hollowed strawberries aside.
  2. In a medium bowl, beat the softened cream cheese until smooth.
  3. Add the powdered sugar, vanilla extract, and heavy cream to the cream cheese. Beat until the mixture is light and creamy, scraping down the sides of the bowl as needed.
  4. Transfer the cheesecake filling to a piping bag fitted with a star tip, or use a small spoon.
  5. Pipe or spoon the filling evenly into the hollowed centers of the strawberries. Do not overfill.
  6. If desired, sprinkle the tops with lemon zest or chopped nuts.
  7. Refrigerate the stuffed strawberries for at least 30 minutes before serving to allow the filling to firm up slightly.

Notes

  • Make sure the cream cheese is fully softened to prevent lumps in your filling.
  • You can prepare the hollowed strawberries up to 4 hours ahead of time, but wait to fill them until closer to serving.
  • For a slightly tangier filling, add 1 teaspoon of fresh lemon juice to the cream cheese mixture.
