Make these high protein breakfast egg muffin cups in your muffin tin for an easy, freezer friendly breakfast perfect for meal prep.

Ingredients

Scale
  • 12 large eggs
  • 1/4 cup milk (any kind)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1/2 cup cooked, crumbled bacon or diced ham
  • 1/2 cup chopped cooked vegetables (spinach, bell peppers, onion)

Instructions

  1. Preheat your oven to 350 degrees F. Lightly grease a standard 12-cup muffin tin or use silicone liners.
  2. In a large bowl, whisk the eggs, milk, salt, and pepper together until they are light and slightly frothy. This helps create a fluffy interior.
  3. Stir in the shredded cheese, cooked meat, and chopped vegetables. Distribute the mixture evenly among the 12 muffin cups, filling each about three-quarters full.
  4. To prevent rubbery texture, you can create a water bath: place the muffin tin inside a larger baking pan. Carefully pour hot water into the larger pan until it reaches halfway up the sides of the muffin tin.
  5. Bake for 18 to 22 minutes, or until the egg bites are set and a toothpick inserted near the center comes out clean.
  6. Remove the muffin tin from the oven (and the water bath, if using). Let the egg bites cool in the tin for 5 minutes before carefully removing them.
  7. For meal prep, cool completely before storing.

Notes

  • For the best texture, do not overfill the muffin cups; leave space for the eggs to rise slightly.
  • If you do not want to use a water bath, simply bake them directly in the greased tin, but watch closely to prevent overcooking.
  • To freeze: Place cooled egg bites in a freezer-safe bag or container. They keep well for up to one month.
  • To reheat from frozen: Microwave one or two keto egg bites for 60 to 90 seconds, or until heated through.
