A recipe for a simple, refreshing beverage combining fresh lime juice, mint, and cucumber.

Ingredients

Scale
  • 1 cup fresh lime juice (about 6-8 limes)
  • 1 cup granulated sugar
  • 1 cup water (for simple syrup)
  • 2 cups cold water
  • 1 large cucumber, peeled and roughly chopped
  • 1/2 cup fresh mint leaves, packed
  • Ice cubes

Instructions

  1. Make the simple syrup: Combine the sugar and 1 cup of water in a small saucepan. Heat over medium heat, stirring until the sugar dissolves completely. Remove from heat and let cool.
  2. Prepare the cucumber and mint base: Place the chopped cucumber and mint leaves into a blender. Add about 1/2 cup of the cooled simple syrup. Blend until smooth.
  3. Strain the mixture: Pour the cucumber-mint mixture through a fine-mesh sieve into a large pitcher, pressing down on the solids to extract all the liquid. Discard the solids.
  4. Combine ingredients: Add the remaining cooled simple syrup, the fresh lime juice, and the 2 cups of cold water to the pitcher. Stir well to combine.
  5. Chill: Refrigerate the limeade for at least 30 minutes to allow the flavors to meld.
  6. Serve: Fill glasses with ice. Pour the limeade over the ice. Garnish with thin cucumber slices or mint sprigs if desired.

Notes

  • For a sparkling limeade, substitute 1 cup of the cold water with club soda or sparkling water just before serving.
  • If you prefer a less intense cucumber flavor, muddle the cucumber slices instead of blending them, then add them directly to the pitcher.
  • Adjust the sugar content to your taste preference after chilling.
