A simple, refreshing salad featuring crisp cucumbers, bright lemon, olive oil, and fresh herbs.

Ingredients

Scale
  • 3 large cucumbers, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/2 cup crumbled feta cheese (optional)
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons fresh mint, chopped
  • 1/4 cup extra virgin olive oil
  • 3 tablespoons fresh lemon juice
  • 1 clove garlic, minced
  • 1/2 teaspoon dried oregano
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Place the sliced cucumbers, halved tomatoes, sliced red onion, parsley, and mint into a large bowl.
  2. In a small bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, salt, and pepper to make the dressing.
  3. Pour the dressing over the cucumber and vegetable mixture. Toss gently to coat everything evenly.
  4. If using, gently fold in the crumbled feta cheese.
  5. Cover the bowl and refrigerate for at least 15 minutes before serving to allow the flavors to meld.
  6. Taste and adjust salt and pepper before serving.

Notes

  • To prevent the cucumbers from becoming watery, you can lightly salt the slices and let them sit in a colander for 10 minutes, then pat them dry before mixing with the other ingredients.
  • This salad tastes best when served chilled.
  • For a vegan version, omit the feta cheese.
