Transform your leftover mashed potatoes into these irresistible, crispy-on-the-outside, fluffy-on-the-inside potato cakes. This easy recipe adds sharp cheddar and fresh chives for a comforting side dish or snack.

Ingredients

Scale
  • 3 cups leftover mashed potatoes (cold)
  • 1 large egg, lightly beaten
  • 1/2 cup all-purpose flour
  • 1 cup shredded sharp cheddar cheese
  • 2 tablespoons fresh chives, chopped
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup vegetable oil, for frying

Instructions

  1. In a medium bowl, combine the cold mashed potatoes, beaten egg, flour, shredded cheddar cheese, chopped chives, garlic powder, salt, and pepper. Mix gently until just combined. Do not overmix.
  2. Shape the potato mixture into small patties, about 1/2 inch thick and 2 to 3 inches wide. You should get about 8 to 10 cakes.
  3. Heat the vegetable oil in a large skillet over medium heat. You need enough oil to coat the bottom of the pan well.
  4. Carefully place the potato cakes into the hot oil, ensuring you do not overcrowd the pan. Work in batches if necessary.
  5. Cook for 3 to 4 minutes per side, until the cakes are golden brown and crispy on the exterior.
  6. Remove the crispy potato cakes from the skillet and place them on a plate lined with paper towels to drain excess oil.
  7. Serve your mashed potato cakes immediately. They are wonderful as a side dish or a quick snack.

Notes

  • For the best crispy texture, make sure your mashed potatoes are cold before mixing.
  • If your leftover mash is very loose, add one extra tablespoon of flour until the mixture holds its shape easily.
  • Serve these savory potato pancakes with a dollop of sour cream or a side of applesauce for a classic pairing.
  • You can substitute chives with finely chopped green onions or parsley for a different flavor profile.
