Make a rich, decadent waffle stuffed with gooey marshmallow and a molten chocolate center.

Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/4 cups milk
  • 1/2 cup melted unsalted butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup mini marshmallows
  • 4 ounces dark chocolate, chopped into small pieces
  • Cooking spray or oil for the waffle iron

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. In a separate bowl, whisk together the milk, melted butter, eggs, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined; do not overmix the batter.
  4. Preheat your waffle iron and lightly coat it with cooking spray or oil.
  5. Pour enough batter onto the iron to cover the surface, leaving space around the edges for expansion.
  6. Quickly place half of the chopped chocolate pieces and half of the mini marshmallows onto the batter in the center of the iron.
  7. Spoon a little more batter over the filling to cover it completely.
  8. Close the waffle iron and cook according to your iron’s instructions until the waffle is golden brown and cooked through, usually 4 to 6 minutes.
  9. Carefully remove the cooked waffle. Repeat the process with the remaining batter, chocolate, and marshmallows to make a second stuffed waffle.
  10. Serve immediately while the chocolate center is molten.

Notes

  • For an extra lava effect, use chocolate chips that melt easily.
  • You can use a Belgian waffle iron for thicker pockets to hold more filling.
  • Dust the finished waffle bomb with powdered sugar before serving.
