Ingredients
Scale
4 tuna steaks (about 6 ounces each)
1/2 cup low-sodium soy sauce
1/4 cup rice vinegar
2 tablespoons sesame oil
1 tablespoon fresh grated ginger
2 cloves garlic, minced
1 teaspoon brown sugar
1/2 teaspoon red pepper flakes (optional)
Instructions
In a medium bowl, whisk together the soy sauce, rice vinegar, sesame oil, grated ginger, minced garlic, brown sugar, and red pepper flakes if you are using them. This creates your marinade for tuna steak.
Place the tuna steaks in a shallow dish or a resealable plastic bag.
Pour the marinade over the tuna steaks, ensuring all sides are coated.
Cover the dish or seal the bag. Refrigerate for at least 30 minutes, but no more than 2 hours. Do not over-marinate, as the acid can start to break down the fish texture.
Remove the tuna from the marinade and pat it dry with paper towels before cooking. Discard the remaining marinade.
Grill or sear the tuna steaks according to your preference.
Notes
For a quick tuna marinade for grilling, 30 minutes is usually enough time to impart flavor without affecting the texture.
If you want to marinate overnight tuna steak marinade, reduce the amount of rice vinegar by half to prevent the fish from becoming too acidic.
Patting the tuna dry before cooking helps you achieve a better sear.
