Ingredients

Scale
  • 1 pound ground beef (80/20 recommended)
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons sesame oil
  • 1 tablespoon minced fresh ginger
  • 4 cloves garlic, minced
  • 1/2 small yellow onion, finely grated or pureed
  • 1 teaspoon black pepper
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 4 cups cooked white rice
  • 1 cup shredded carrots
  • 1 cup sliced green onions, for garnish
  • 1 tablespoon sesame seeds, for garnish
  • Optional: Kimchi or steamed broccoli for serving

Instructions

  1. In a medium bowl, whisk together the soy sauce, brown sugar, sesame oil, ginger, garlic, grated onion, and black pepper. This is your bulgogi sauce.
  2. In a separate small bowl, mix the cornstarch and water to create a slurry. Set aside.
  3. Heat a large skillet or wok over medium-high heat. Add the ground beef and cook, breaking it apart, until it is mostly browned. Drain off any excess fat.
  4. Pour the prepared bulgogi sauce over the cooked ground beef. Stir well to coat the meat evenly.
  5. Bring the mixture to a simmer. Cook for 3 to 4 minutes, stirring occasionally, until the sauce thickens slightly.
  6. Stir the cornstarch slurry into the simmering beef mixture. Cook for 1 minute more until the sauce coats the beef thickly. Remove from heat.
  7. To assemble the bowls, divide the cooked rice among four bowls.
  8. Spoon the ground beef bulgogi mixture over the rice in each bowl.
  9. Top each bowl with shredded carrots, sliced green onions, and sesame seeds. Serve immediately with any desired side vegetables.

Notes

  • For a deeper flavor, you can marinate the ground beef in the sauce for 30 minutes before cooking, though this is optional for a quick meal.
  • Use low-sodium soy sauce if you prefer less salt.
  • You can substitute ground turkey or ground pork for the beef.
