Ingredients
Scale
1.5 lb ground beef
1/2 cup soy sauce
1/4 cup brown sugar
2 tablespoons sesame oil
1 tablespoon minced garlic
1 teaspoon grated fresh ginger
1/2 teaspoon black pepper
1/4 cup water
1 tablespoon cornstarch
12 slider buns (Hawaiian rolls recommended)
1 cup prepared kimchi, chopped
1/2 cup shredded green cabbage
2 tablespoons mayonnaise
1 tablespoon rice vinegar
1 teaspoon sugar
Pinch of salt
Instructions
Combine soy sauce, brown sugar, sesame oil, garlic, ginger, and pepper in a bowl. Mix well.
In a separate small bowl, whisk the cornstarch and water together to create a slurry.
Cook the ground beef in a large skillet over medium heat, breaking it up until fully browned. Drain excess fat.
Pour the soy sauce mixture over the cooked beef. Stir to coat.
Pour the cornstarch slurry into the skillet. Cook, stirring constantly, until the sauce thickens and coats the beef, about 2 minutes. Remove from heat.
For the slaw, combine the chopped kimchi, shredded cabbage, mayonnaise, rice vinegar, sugar, and salt in a medium bowl. Mix until everything is coated.
Slice the slider buns in half horizontally. Lightly toast the cut sides of the buns if desired.
Place a portion of the Korean BBQ beef mixture onto the bottom half of each slider bun.
Top the beef with a spoonful of the kimchi slaw.
Place the top half of the bun on the slaw. Serve immediately.
Notes
You can use thinly sliced ribeye or sirloin instead of ground beef for a more traditional bulgogi flavor.
If you prefer a sweeter slaw, add a little more sugar to the dressing mixture.
For extra flavor, brush the tops of the assembled sliders with melted butter before toasting.
